What is a Belgian Waffle?

The Belgian Waffle is the classic — the golden-square waffle most Indians grew up seeing in photos of European café windows. It's made with a leavened batter, cooked in a grid-pattern iron, and comes out golden, crisp on the outside, soft inside. It originated in Hong Kong in the 1950s, where street vendors started making them with an egg-heavy batter cooked in a special iron with dome-shaped indentations. The result is a waffle covered in bubble-like puffs — visually striking, lighter than a Belgian waffle, and shaped like a flat sheet.

The magic move: when it comes out hot, the Bubble Waffle is rolled into a cone. Soft serve ice cream goes in the middle, and toppings like Oreo, Kitkat, Nutella or fresh fruit get layered in. You eat it with one hand, like an oversized dessert ice-cream cone.

Batter, shape, and texture — the real differences

Batter: Belgian batter is yeasted (traditionally) or baking-powder leavened. Bubble waffle batter is egg-heavy, sweeter, and thinner.

Iron: Belgian irons press a deep square grid. Bubble irons have dome indentations that create the signature bubbles.

Shape on the plate: Belgian waffles are flat squares. Bubble waffles are flat sheets you roll into cones.

Texture: Belgian waffles are crisp-on-the-outside, pillowy inside. Bubble waffles are lighter, slightly chewy at the bubble tips, crisp elsewhere.
